Summary

add an explicit dependency on the Mongo Ruby driver and update the lockfile to pull in a MongoDB 5 compatible driver release
bump the docker-compose Mongo image to the 5.0 series so local development matches the new server version

Testing

bundle update mongo (fails: unable to download git-sourced gems due to 403 errors)
